This enables the ventilation system to capture the heat and pollutants.
  • Air Mover: This is another crucial component of the ventilation system. Situated within the system, the air mover or fan helps to push the grease, smoke, and vapor pollutants from the kitchen into the system. The amount of air that the fan is able to generate depends on the size of the ducts and overall length of the hood.
  • External Vents: The entire ventilation system is connected to a system of pipes that carries all the pollutants from the kitchen to the building exterior. These help to minimize the pollutants in the kitchen as well as maintain the health of the establishment’s employees and guests.

While every manufacturer may have unique design features, there are a few basic characteristics that one will find in any commercial kitchen scrubber.

  • Flow Rate: This refers to the air flow that moves through ventilation system. On an average, one will find kitchen scrubbers with the flow rates ranging anywhere from 1,000 cubic feet per minute (CFM) to over 50,000 CFM.
  • Construction: As scrubbers are used for long and continuous time periods, the construction has to support this overall usage. Commercial kitchen scrubber manufacturers usually construct the scrubbers out of stainless steel or aluminum. These two metals are known for their strength, durability, and resistance to corrosion.
  • Operation: Commercial kitchens are known for their stressful environments. In such a situation, it is really not possible for anyone to keep a close eye on the scrubber. For this reason, commercial scrubbers are designed to work automatically. They are also designed with a simple on and off switch for operation. Some manufacturers even design automatic cleaning down of the system, creating little need for maintenance.
  • Certifications: Government and global organizations such as the Food Service Consultants Society International (FCSI) and Underwriters Laboratories (UL) have laid downs certain parameters, which manufacturers have to adhere to. The most common certifications and standards used for kitchen scrubbers are UL 710 and UL 867.
